Vegetable and Fruit Wraps
Got the idea to add more vegetables to my lunch from my flatmate who absolutely hates vegetables, but doesn’t notice them if she puts them inside a tortilla.
You will need:
mini babybel cheese (option - add humus if vegan)
2 whole grain tortilla wraps
1 small apple (grated and access juice squeezed out)
Wash and cut up your vegetables. For one tortilla spread half with honey, half with almond butter. Then cover with a layer of grated apple and roll up. For the other tortilla spread humus all over it. Add a thin layer of tomatoes, cucumber, avocado, and onion. Put a line lettuce towards the end you start rolling from and roll it up.
Cheese and fruits are amazing together! I am actually not that big a fan of humus, however if it’s hidden in a tortilla it’s amazing. Also don’t mind broccoli so much when it’s raw. Probably due to the flavour not being as strong and it not being as soggy as when it’s cooked.
I’m sure you can add pear or use peanut butter instead of almond butter. Whatever you like really. I just really love almond butter.
